The moment is finally here to reveal my Berrymazing Protein Pancakes! πŸ˜€ I know I posted that I will post this recipe a week ago however I got quite backed with papers, books, and stuff from my Winter course at my college and couldn’t find a suitable time to post this… πŸ™ I’m sorryyy. πŸ™ But nevertheless, it is here and you will not regret trying this! πŸ˜€

In addition, I also hope that you are all having your breakfasts every day by now. If you’re not, please read this: Why you should have breakfast! 
So, before I get to my recipe, here’s a little bio about my Berrymazing Protein Pancakes πŸ™‚

♣ Why is it Berrymazing?

It is Berrymazing because I didn’t just want to make a pancake that has berries in it. I wanted to make it super fun, not to just make, eat them, and end of story. But to actually take a step forward so that you will be able to enjoy them even as you look at them while you eat up! And in order to do that, I attempted to blend in the beautiful berry-color into the pancake batter itself instead of its original pancake color! How amazing is that? πŸ˜€ Very Berrymazing indeed, my loves! <3 πŸ™‚

Another reason is that, I really wanted my pancakes to have that delicious berry-juiciness burst like bubble pops as you bite into them. So unlike most recipes that often add the blueberries after you’ve poured the batter into the pan, I mixed my berries into the batter, then kept some berries on the side to fill in the gaps and top it off later. The problem with adding the berries after you’ve poured the batter is that it’s almost impossible to evenly stud the pancakes with berries before they set. The fun does not stop here, in this protein pancake, I’ve also created a delicious “honey” substitute incorporating a super rich berry-kick, make sure you have your Berrymazing Protein Pancakes with this enriching topping! πŸ˜› With this recipe, you will be guaranteed to get a Berrymazing burst in every bite!

Ingredients: Pancake Batter

β™₯ 2/3 cup of rolled oats
β™₯ 4 egg whites
β™₯ 1/2 cup of Fage Greek yogurt

β™₯ 1/2 cup almond milk
β™₯ 1 cup of blueberries

β™₯ 1/2 cup of black berries
β™₯ 1 tbsp of coconut oil
β™₯ 1/4 tsp of baking powder
β™₯ 1/2 tsp of vanilla extract to sweeten

Ingredients: Berrymazing Protein Pancake Topping (Honey substitute! :D)

β™₯ 1 handful of blueberries
β™₯ 1 tbsp of Fage Greek yogurt
β™₯ 1 handful of mixed nuts

Directions:

β™₯ Blend the above ingredients except for 3/4 cup of blueberries on the side. (Blend only 1/4 cup of blueberries first, you may add more blackberries/blueberries for a richer color)
β™₯ Toss 1/2 cup of blueberries and gently stir into the blended ingredients.
β™₯ Pour the pancake batter on to a preheated pan on medium low, when you start to see bubbles form in the center of your pancakes and the edge of your pancakes turn light brown, flip and cook another 20-30 seconds.
β™₯ For topping: Blend blueberries and Fage Greek yogurt (honey substitute).
β™₯ To garnish, sprinkle some cinnamon, “honey” substitute topping, mixed nuts and remaining blueberries!
